Cucumber
Cucumbers are a delicious and hydrating food with a water content of 97%. The valuable nutrients are mostly in the outer peel, so the vegetables are best eaten unpeeled. The Association for the Conservation of Crop Variety has named the cucumber vegetable of the year 2019 and 2020.

Good to know
Today's cucumbers are usually usually free of bitter substances; but according to an old kitchen rule, the cucumber should be peeled from the flower to the stalk, as the bitter substances accumulate from the stem. Often, only the first few inches are bitter. With increasing maturity, the bitter substances are broken down, so you usually won’t have any issues with cucumbers that are harvested later.
