Chocolate brownies with grapefruit caramel sauce

Ingredients for the grapefruit caramel sauce:

  • 150g Organic Corn Sugar from Frusano
  • 40g butter
  • 1 medium grapefruit
  • 60g whipped cream (lactose-free if necessary)

    Directions:

    1. Preheat the oven to 175 °C top/bottom heat. Chop the organic dark chocolate into small pieces and set aside some for decoration if desired. Then prepare the brownies according to the package instructions together with the chopped organic dark chocolate.
    2. While the brownies are in the oven, fillet the grapefruit or remove the peel and skin. Collect any juice that comes out and set aside.
    3. For the caramel sauce, place the organic corn sugar in a wide saucepan or pan and melt slowly over medium heat. Only when most of the grain sugar has melted, gently stir with a heatproof spoon or whisk and allow to melt completely. Allow the organic grain sugar to caramelize slightly while stirring until it turns a nice golden brown color. Then add the butter and whisk vigorously. Be careful here, as the caramel will foam up strongly for a short time. Once the butter has completely dissolved, remove the pot or pan from the heat and slowly stir in the cream. Continue stirring until the caramel thickens and has a creamy consistency.
    4. Once the caramel sauce is ready, stir in the grapefruit juice (2 tablespoons) that you may have collected. The juice will make the sauce slightly thinner and less sweet. Without adding the juice, you will have a creamier, thicker sauce. Then gradually add the grapefruit fillets to the pot/pan and cover with caramel on all sides. 
    5. Last but not least, cut the lukewarm brownie into rectangles with a sharp knife or cut it out with any shape. Place the portions on plates and decorate with the grapefruit caramel sauce. If desired, decorate with chopped organic dark chocolate and crushed organic cereal (powdered) sugar.
    Tip: It is even easier to remove the skin from the grapefruit if it has been peeled earlier. Simply peel about 1 hour beforehand and separate the individual wedges. Leave on a plate until ready to use. The skin dries and is much easier to remove.
