Low-fructose berry buttermilk dessert

A light and very versatile dessert. The refreshing conclusion to a successful evening!

  1. 80 ml water with 80 g Organic corn sugar in a pot boil up. Then stir in the glass of tayberry fruit spread evenly with a whisk. Remove 1/3 of the sauce and put aside for later. Now add the buttermilk to the rest.
  2. Bring the milk to the boil in a saucepan and dissolve 1 pack of Organic Red Cake glaze sweetened with dextrose. Stir the milk into the buttermilk mixture, pour into a flat casserole dish and chill for about 1 hour.
  3. Mix the organic currant syrup with 150 ml water, bring to the boil and stir in the second pack of organic red glaze sweetened with dextrose with a whisk. Allow the mixture to cool slightly and then carefully pour into the casserole dish. Make sure that the mixture is only lukewarm or cold, otherwise the dessert, which has solidified in the mould, will melt. Chill for another hour.
  4. In the meantime, melt the chocolate in a water bath and use it to form decorative elements on a baking paper.
  5. Remove the dessert from the refrigerator, cut out four portions with a small ring (or other cookie cutters) and carefully lift them out of the mould in the ring using a cake lifter or spatula. Place the dessert on a plate, garnish with the sauce and chocolate decorations that have been removed and finally sprinkle some of the cereal sugar over it.
  6. The buttermilk dessert should be enjoyed the same day. 
Tip: The buttermilk dessert is very versatile, as it also tastes great with our other fruit spreads. Simply replace the Frusano Tayberry Spread with, for example, organic Frusano Strawberry Rhubarb Spread or Frusano Red Currant Spread. For a summery variant, Frusano Calamansi Spread can be added to buttermilk. In this case we recommend using our Frusano Elderflower Syrup instead of the Frusano Red Currant Syrup for the topping.
