Frusano Corn Sugar can substitute table sugar in a ratio of one-to-one in most recipes, the result will be slightly less sweet. Frusano Corn Sugar, like dextrose, consists predominantly of glucose but has a far lower water content. Background: Dextrose contains up to 10% water. The contained water is bound in the crystal structure of dextrose, but is freed when the dextrose is dissolved, e.g. in a cake batter. This is the reason why often people say that dextrose makes dough or other dishes more fluid. This is not the case with Frusano Corn Sugar.
