Double Chocolate Cookies

These double chocolate cookies are so chocolatey and delicious. They work wonderfully on a holiday cookie platter, or whenever you need tasty and rich chocolate bliss!

Directions:

  1. Melt 200g Dark Chocolate in a water bath.
  2. Combine the butter, eggs, Corn Sugar, salt, and the melted Dark Chocolate in a mixing bowl and beat with a hand mixer until creamy.
  3. Mix together the flour and baking powder and sift into the wet ingredients.  Mix well.  Wrap the dough in plastic wrap and refrigerate for 2 hours.
  4. Preheat the oven to 175°C (top and bottom heat). From the dough, form balls about 2.5cm big.  Gently press them flat and place them on a baking-paper-lined baking pan.  Bake on the middle rack of the oven for about 12-15 minutes.  Let cool.
  5. For the decoration, melt the Dark Chocolate in a water bath and drizzle over the cooled cookies. Allow the chocolate to set and store the cookies in a cookie jar.
