Ingredients for the crust:
- ½ cup + 1 tbsp butter (lactose free if necessary)
- 7oz (200g) Frusano Spelt Butter Cookie
Ingredients for the cheesecake:
- 1¼ cups + 1 tbsp cream cheese (lactose free if necessary)
- 1¾ cups + 3 tbsp greek yogurt or cottage cheese (lactose free if necessary)
- ¾ cup + 3 tbsp Frusano Corn Sugar
- 3 eggs
- 1 envelope Frusano Vanilla Pudding Powder
Directions:
- Preheat the oven to 350°f (convection) and line a springform pan with parchment paper.
- Put the cookies in a freezer bag and smash to a fine crumb with a rolling pin. Melt the butter in the microwave for about 1 minute (900 Watt) and pour over the cookie crumbs. With a fork, mix the butter into the crumbs until it is evenly distributed. Press the crumb mixture into the base of the springform pan.
- Combine all of the ingredients for the filling and mix with a hand mixer until smooth. Spread the filling over the cookie crust and bake on the middle rack for about 45 minutes.
